Ginisang Hipon


Ingredients:

0.5 lbs. shrimps
1 & 1/2 cup tomatoes, sliced
1 pc. garlic, chopped
Small chunck of ginger, chopped
Salt, to taste
Black pepper, to taste
Italian mix herbs, to taste
200 ml. water

How to Cook:

1. Clean the shrimp by removing the intestines at the back using a toothpick or scissors. Cut the antenna, claws (walking legs) and rostrum. I usually take off the entire face but keeping the head because the brain is gives a tasty juice to the dish although we don't eat it. Leave the shell intact.

2. Heat the pan and then add cooking oil. Wait until oil is hot. Sauté garlic and ginger for 40 seconds. Add tomato until softens and the liquid has been secreted.

3. Add the shrimps and stir a few times to evenly cook sides, be gentle as we don't want to deform the shrimp. Cook until it turns orange.

4. Add 200 ml. of water. Simmer for few minutes until it boils.

5. Add salt, pepper, Italian mix herbs to taste. Mix well and serve hot. When plating, I already remove the ginger since we don't eat it.
